Cascades Cannery
Cascades Cannery is a farmer-led nonprofit project building a local food preservation hub in Central Oregon. Our mission is to reduce food waste, increase access to locally grown products, and create economic opportunity for farmers by turning surplus harvests into shelf-stable goods like sauces, jams, and preserved vegetables.

Already Underway
We’re actively working to launch Cascades Cannery for the 2025 harvest season. Right now, we are:
Securing a licensed kitchen space in Bend
Developing tested, approved recipes for acidified and preserved products
Completing Oregon Department of Agriculture (ODA) licensing
Our immediate goal is to be ready to capture and process the 2025 harvest — beginning with main season crops like tomatoes, peppers, squash and roots. By perserving this bounty, we extend the market season for farmers and create accessible, shelf-stable goods for our community.
We are currently seeking startup funding and community support to purchase equipment, scale production, and ensure we are fully licensed and staffed to preserve harvest 2025.
